Easy Drop Danish

Heat oven to 450º

1/4 cup margarine or butter, soft                     2/3 cup milk

2 teaspoons sugar                                            1/4 cup any flavor preserves

2 cups BISQUICK baking mix                        Glaze (Below)

MIX margarine, sugar and BISQUICK until crumbly. Stir in milk until dough forms; beat 15 strokes. Drop by rounded teaspoon. 2" apart onto lightly greased cookie sheet.

Make a shallow well  in center of each with back of spoon; fill with 1 teaspoon preserves. Bake until golden for 10-15 minutes. While warm, drizzle with glaze.  Makes 12 Danish.

Glaze: Beat 2/3 cup powdered sugar, 1 teaspoon warm water and 1/4 teaspoon vanilla until smooth.

Breakfast Cookies

1/2 cup seedless raisins

1/2 cup shredded coconut

1/2 cup whole wheat flakes (wheaties)

1/2 cup quick oats

1 cup white flour

1/4 teaspoons baking powder

1/4 teaspoons baking soda

1/4 teaspoons salt

1/4 cup plus 2 tablespoons brown sugar

1/4 cup plus 2 tablespoons white sugar

1/4 cup plus 2 tablespoons shortening

1 egg

1/2 teaspoon vanilla

  1. Combine raisins, with coconut, wheat flakes, oats and flour mixture. (flour baking powder, baking soda, and salt.)

  2. Cream shortening  and both sugars in separate bowl.

  3. Add eggs and vanilla to sugar mixture.

  4. Add dry ingredients, working to form a stiff dough.

  5. Measure 1/3 to 1/2 cup dough for each cookie and place on lightly greased cookie sheet.

  6. Flatten to 4-5 inch circle on the sheet.

  7. Bake at 375º for 10 to 12 minutes or until done.

  8. Remove cookies to cooling rack.
